Red Snapper with Chilli Butter

There are different ways I like fish, but often, I like it slightly fried. Traditionally in my family, fish is deep fried with a semolina coating. So this is quite different.


  • Red Snapper or any white fish, boneless fillets
  • Crushed garlic
  • Cut fresh green and red chillies
  • Olive oil
  • Corriander
  • Lemon juice

Marinade the fish with all the ingredients and refrigerate for 2-3 hours.


Let the excess marinade drip off the fish, reserve the marinade in the bowl.

Add olive oil to the pan and cook the fish for two minutes on each side or until golden.


In the same pan in which you fried the fish add the marinade.

Whisk in some butter. Keep warm till you’re ready to serve.


Pour the butter over the fish once served.
