Something sample and delicious to end lemon week, yummy lemon chicken tenders. They are really easy to make and smell delicious when in the oven.
For the tenders:
- Boneless chicken, sliced into thin slivers
- Parmesan cheese, grated
- Parsley, finely chopped
- Lemon juice
- Bread crumbs
- Italian seasoning
- Butter, melted
Preheat the oven to 180C.
In a bowl, mic the bread crumbs, cheese, parsley and Italian seasoning, and set aside.
Add the lemon juice to the butter and mix well.
Dip the chicken slices into the butter and then coat them in the bread crumbs. Place on a baking tray. I coated mine in oil so that the chicken doesn’t stick but a sheet of baking paper would work just as well.
Bake for about 20 minutes or until the chicken is white. In the last few minutes I also cranked up the temperature and raised the level of the tray so that the crumbs turned nice and golden.
The chicken goes perfectly with garlic aioli.
