Devil’s Food Cake

In honor of the birthday of one of my favorite people ever, I thought I would share a cake recipe. I’ve made plenty of devil’s food cakes before, the Betty Crocker one, and I can honestly say that this tastes exactly the same if not better.

For the cake:

  • 180g butter
  • 290g sugar
  • 3/4 cup cocoa powder
  • 2tsps vanilla essence
  • 3 eggs
  • 2 cups all purpose flour
  • 1 1/2tsps baking soda
  • 1tsp baking powder
  • 1 1/4 cups brewed coffee
  • 1/4 cup milk

Prepare two 9 inch round baking pans by greasing them, and then dusting them with flour.

Beat the butter until fluffy, add in the sugar and beat until lighter in colour. Add in the cocoa powder and vanilla and beat until well combined.

Add in the eggs, one at a time, beating well after each addition.

Sift the flour, baking soda and baking powder. Combine the coffee and milk.

Alternating, add flour and coffee to the batter starting and ending with flour, mixing until each addition is just combined into the batter. Make sure to scrape down the sides of the bowl.

Divide the batter evenly between the 2 prepared pans. Bake in a preheated 180C oven for 30-35mts. Test for doneness using a toothpick.

Let the cakes cool in the pan for 30mts before turning it onto a wire rack.

Once the cakes have cooled, leaven them by slicing off the top uneven bit.

The icing I used for the cake was a simple buttercream frosting.

PLace the bottom layer on a cake stand. Using 1/2 the buttercream spread it evenly on the cake, spreading it to the edges.

Place the second layer on top and do the same and then spread it around the sides as well.
