Brookies

With Masterchef Australia having started a few weeks ago, everyone is trying out recipes from the masterclass. I however decided to try a recipe made by one of the contestants, Brookies. They are basically brownie cookies meaning they are crusty on the outside and gooey on the inside. Its the sort of thing I’d eat in the middle of the night with a glass of milk.

For the brookies:

  • 350g dark chocolate
  • 45g butter
  • 225g caster sugar
  • 80g cornflour
  • 1tsp baking powder
  • 3 eggs
  • 1tsp vanilla
  • White chocolate chips

Preheat oven to 180C.

Over bain marie, melt the dark chocolate and butter. Stir well to combine. Remove it from the heat and set aside to cool.

Combine remaining ingredients in the bowl of an electric mixer fitted with a paddle attachment and beat until light and fluffy. Add cooled chocolate butter mixture and mix until well combined.

I found the mixture to runny to spoon into actual cookies so I lined a baking tray and spread the batter into it. First I added a thin layer sprinkling some white chocolate chips and then added the rest of the batter, doing the same on top.

Bake the brookies for about 20 minutes till its relatively firm. You want to let it cool completely before cutting it up into squares. I even let it set in the fridge giving them a chance to firm up.
