Something I don’t get to eat a lot of is pancakes. And they are one of my favourite foods ever! I love waffles too, but since I don’t have a waffle iron this works out very well as a substitute. The recipe I have used here is from Zoella’s blog however I have adapted it a bit.

For the Pancakes:
- 3 eggs, yolks and whites separated
- 115g flour
- 1tsp baking powder
- 140ml milk
- A pinch of salt
- 1tsp vanilla essence
In a bowl sieve the flour and baking powder together.

To that bowl, add the egg yolks, milk and vanilla.

In another bowl whisk the egg whites with a pinch of salt, until they form stiff peaks.
Part by part, fold the egg whites into the yolk mixture. Try not loosing too much air. This helps the pancakes stay fluffy.

Heat a non stick point and then using ladle, pour a ladle full into the centre of the pan. I don’t season my pan in any way. USing a regular non stick pan that has been heated enough works perfectly for me.

Once you see small bubbles appear on the surface of the pancake, which then burst, its time to flip.

The toppings you use for these pancakes could be any. Since there is no sugar in them, you could even do something like cheese spread and make it savoury.
I did three different toppings plain butter, honey and Nutella with sprinkles (this one works perfectly when you want to give someone breakfast in bed on their birthday)
