Homemade Granola Bars

So I tend to skip meals now days, due to my work schedule and the hours I keep. Which means when I do get a chance to eat, it needs to be something that’s relatively healthy, and also tasty. And these granola bars fit the bill perfectly.

The bars are really really easy to make, and keep decently well. I would suggest making a batch on Sunday night, so that you have enough to last you through the week.

I get a batch of 14 bars, each 10cm x 4cm. Wrap them up in some butter paper to absorb the grease.

For the bars:

  • 170g butter
  • 65g brown sugar
  • 65g honey
  • 170g oats
  • 60g mixed seeds, pumpkin, sunflower and flax
  • 50g dried berries

In a saucepan, start by melting the butter, brown sugar and honey.

Weigh out the rest of your ingredients in a bowl, and mix.

As soon as the butter and sugar have dissolved and the mixture is bubbling away, pour it onto the oats.

Give it all a good mix, ensuring that everything is coated with the buttery, sugary mixture.

Spread it onto a baking tray that has been lined with waxed paper, pressing and packing the mixture properly. You don’t want the mixture to be loosely packed, since the bars can fall apart after baking.

Bake the at 190C for 15 minutes. Remove from the oven, and cut into bars with a sharp knife. Put the tray back in the oven for another 10 minutes.

Allow the bars to cool completely before removing them from the tray, and breaking them apart.
